Easy and Healthy Ground Turkey Meatball Recipe
I put this easy ground turkey meatball recipe together because I needed an easy protein that I could pack in a lunch with me to go. I made them at night and had them for dinner and then packed the rest away for an easy grab-and-go Mynt protein for myself. Having a protein, carb and fat every 3 hours is easy at home but I have to go out for a few hours sometimes. I figured I’ll just pack one of those cold packs in my lunch and take my meatballs and fruit with me!
I made this easy ground turkey meatball recipe after eye-balling a few others online. I’m not a master chef in the kitchen but what I love about Core is I don’t have to be. I can look at what others have made and make some adjustments I think would work for my Mynt Core dinner recipes.
Easy Ground Turkey Meatball Recipe Ingredients:
- 1 lb. extra lean ground turkey
- 1/2 c. almond meal (instead of breading)
- 1/4 c. homemade chicken stock, no salt (recipe coming)
- 3 tbsp of egg whites (equivalent to 1 egg)
- 1/4 onion, finely minced
- 1 clove of garlic, finely minced
- 1/2 tsp of rainbow peppercorns
- Fat-free cooking spray
Preheat oven to 400 degrees. Place everything into a large bowl and mixed together thoroughly. Spray a large cookie sheet with fat-free cooking spray. Roll your meat mixture into 1 inch balls and place on the cookie sheet 1 inch apart. Bake for 18 minutes on the center rack.

This healthy turkey meatball recipe contains almond flour so the fat is already in the protein. All you have to do is add a carb and you’ve got a quick and easy Mynt meal.
