Mushroom Spinach Egg White Omelet Recipe
For my first Mynt Core Challenge breakfast I had an egg white omelet with spinach and mushrooms. On the side I had some blueberries and raw almonds.
I’m NOT on a Low Carb Diet
The Mynt Core Challenge consists of meals that include 1 protein, 1 carb and 1 fat. Sometimes I split my carbs like I did with this recipe. I did half mushrooms and half blueberries for my carb. I eat in 3 hour increments; every meal consists of a protein, carb and a fat.
Mushroom Spinach Omelet Recipe Ingredients:
- 3 Egg whites
- Handful of Spinach
- 1.5 oz of chopped mushrooms
- Non-fat cooking spray of your choice
- 2 turns of freshly ground rainbow peppercorns
Preheat your pan and lightly coat with fat free cooking spray of your choice. I used an 8-inch fry pan. Put in your mushrooms and spinach and egg whites and cook thoroughly. Because mushrooms count as your carb, I only used a small amount and I diced them up so it would distribute nicely through the omelet.
Mynt Core Breakfast Sides:
- 1.5 oz of Blueberries
- 1 oz of raw almonds
Adding the blueberries and raw almonds balances out my breakfast with the the protein, carbs and fat that I need to not only lose weight but to burn fat too.
