Healthy Egg White Muffins Recipe
For breakfast during my Core detox phase I made these healthy egg white muffins. Took me a little while to get my recipe up. Please feel free to adjust this recipe to your liking of course, I’m no master chef in the kitchen but I what I love about 8-week challenge is that I don’t have to be. It’s made for those of us who need a plug and play way to live healthy.
These healthy egg breakfast muffins are quick and easy to make. You’re going to need a muffin tin for this and some non-fat cooking spray. These are great if you want to make them ahead so you have a quick breakfast during the week before work.
Healthy Egg Muffin Recipe Ingredients:
- Egg whites (about one per cup depending on your veggies)
- Diced mushrooms
- Diced tomatoes
- Chopped spinach
- Non-Fat Cooking Spray
Healthy Egg White Muffins:
Preheat the oven to 350 degrees. Spray your muffin tin with some non-fat cooking spray. Add your veggies into the different cups. Pour your egg whites over the veggies til it is about 3/4 full. Bake in the oven for 15-17 minutes.

These only have a protein and carbs so you need to add a fat serving of your choice to these healthy egg muffin cups.
